Four Seasons Seafood Platter
Ingredients:
1/4 cup peanut oil
1/4 pound minced or ground pork
1 teaspoon salted black beans, very lightly mashed
1 clove fresh garlic, minced
1/2 cup chicken stock
4 slices fresh ginger, slivered
1/2 teaspoon sesame oil
1 Tablespoon thin soy sauce
2 scallions, angle-sliced very thin
1 teaspoon cornstarch mixed into one tablespoon cold water
12 large shrimp, peeled and veins removed, and simmered for one minute just before making the sauce
1 cup backfin crab meat, cartilage removed, simmered for one minute just before making the sauce
2 cups lobster chunks, simmered for one minute just before making the sauce
1 egg, beaten
Preparation:
1. Prepare sauce heating peanut oil and stir-frying pork, black beans, and garlic for three minutes. Then stir in chicken stock, ginger, sesame oil, and soy sauce and bring to the boil. Add cornstarch water and remove from the heat.
2. Stir in the cooked sea foods and return pan to the heat, add egg, stir gently for one minute, then serve on a pre-heated platter.
