Mongolian Beef
Ingredients:
1 pound beef, sliced into one-half-inch by one-half-inch strips
1/2 teaspoon salt
1/4 teaspoon black pepper
3 Tablespoons corn oil or lard
1 pound cabbage or another green, cut into half-inch slices
2 potatoes, cut into half-inch by half-inch long strips
1 large carrot, cut to match the potato strips
4 green onions, cut into two inch pieces
1/2 cup Chinese rice wine or a hard liquor of your choice
Preparation:
1. Mix meat with salt and pepper and let this rest for fifteen minutes.
2. Heat oil in a cast iron pot or fry pan and brown the meat, preferably in two batches, then return all the meat to the pan.
3. Add cabbage pieces, carrots, scallions, and wine and cook this over high heat for five minutes, stirring very often, then serve.
