Chicken in Hot Sauce

Chicken in Hot Sauce
Ingredients
1/2 cup corn oil
1 Tablespoon chili oil
1 whole boneless chicken breast, cut into one inch squares
1 chili pepper, seeded and minced
2 Tablespoons chili paste with garlic
2 Tablespoon rice wine
1 Tablespoon fresh ginger, cut into thin strips
1 teaspoon coarse salt
1 teaspoon crushed brown sugar
2 Tablespoons cornstarch mixed with two tablespoons cold water
1/2 pound Chinese spinach, steamed for one minute
Preparation:
1. Heat oil and fry chicken for one minute until no longer pink on the outside.
2. Add chili pepper and chili paste and stir-fry another minute.
3. Add rice wine, ginger, salt, brown sugar and stir well, then add cornstarch mixture and stir until sauce thickens and clears.
4. Plate cooked greens and pour chicken sauce on top and serve.
