Twice-cooked Pork
Ingredients:
1/2 pound belly pork, cut into quarter-inch slices, each slice cut in half
2 cloves garlic, peeled
2Tablespoons corn oil
2 Tablespoons thick soy
1 Tablespoon hot bean or chili sauce with garlic
1 teaspoon rock sugar, crushed
3 scallions, cut into one-inch pieces
Preparation:
1. Boil pork pieces for fifteen minutes, then remove and drain.
2. Heat wok and dry fry garlic for half minute then add oil and fry another half minute.
3. Mix pork with the rest of the ingredients and add to the hot wok and stir-fry for five minutes, then serve.
