Uppumanga are Mangoes in Brine
Ingredients:
100 tender green mangoes, approximately three-quarters to one inch in length
1 cup of sea salt
Preparation:
1. Wash mangoes well, then cut off most of the stem, leaving a small piece on top of each mango.
2. Layer the mangoes in a ceramic or glass jar that has a tight lid, and sprinkle salt over each layer. After all mangoes are in the jar, stir well.
3. Cover the jar tightly and set it aside for one week. Stir the mangoes twice daily, and the uppumanga will be ready to serve within a week.
