zest of one lemon
1/2 cup mirin (or Swatow or another mild rice vinegar)
1/2 cup lemon juice
6 Tablespoons soy sauce (we suggest the thin variety)
1/2 cup of sugar
1 Tablespoon minced green onion
1. Combine all the ingredients in a jar or bowl. Shake or stir until the sugar dissolves.
Note: Store this dressing a covered container in the refrigerator for up to a month. Serve it with salads, steamed fish, even coleslaw using Ponzu Sauce instead of the recommended dressing.
