Deep-fried Durian

Fruits, Desserts, and Other Sweet Foods

Deep-fried Durian
Ingredients:
1/2 fresh or about six ounces of frozen durian
12 spring or egg roll wrappers
1/2 cup flour mixed with half cup cold water, beaten until smooth
2 cups vegetable oil
Preparation:
1. Separate durian into its natural sections, and cut each in half length-wise. So that it looks like a small skinny plantain or banana.
2. Put one piece of durian on the wrapper, and roll tightly, turning ends of each one in before rolling it. Paste the end with flower mixture.
3. Heat the oil, then add half cup of water and mix the flour and water mixture again. Then dip three fruit rolls, one at a time, in the flour mixture and after excess drips off, put it into the hot oil. Frt until golden brown, drain on paper towels, and fry the second batch.
