Fried Pork in Oyster Sauce |

Ingredients:
1/4 pound pork loin, thinly sliced and cut in strips
1 Tablespoon Premium oyster sauce
1 Tablespoon Shaoxing wine
7 Tablespoons flour
3 and 1/2 Tablespoons cornstarch
1 egg
1 cup vegetable oil
1/2 teaspoon minced fresh ginger
1/2 teaspoon minced scallion
3 Tablespoons Premium Oyster Sauce
2 Tablespoons Shaoxing wine
1/2 teaspoon sugar
1 teaspoon white vinegar
1 to 2 Tablespoons cornstarch mixed with a like amount of cold water
1 Tablespoon dried cloud ear fungus, soaked, then minced
5 water chestnuts, sliced
Preparation:
1. Mix pork with the one tablespoon of oyster sauce and the one tablespoon of the wine. Set aside for fifteen minutes.
2. Make batter of flour, cornstarch, egg, and one-third cup cold water. Mix well, then let rest for five minutes before mixing in the pork.
3. Heat a wok or pan, add the oil, and deep-fry the pork for two minutes until it is no longer pink. Drain and leave one tablespoon of the oil in the wok or pan, discard the rest.
4. Heat the remaining tablespoon of oil and stir-fry the ginger ad scallion pieces for half minute before adding the three tablespoons of oyster sauce, dark soy sauce, sugar, vinegar, and thetwo tablespoons of wine. Stir well, then add the cornstarch solution and stir well before adding the pork, cloud ear fungus, and the water chestnuts. Stir-fry half minute, ten add fried pork, cloud ear fungus, water chestnuts. Serve.
