P.F. Chang's Imperial Black Cod
1 Tablespoon coarse salt
3 ounces shelled soybeans
8 ounces black cod, sliced in half-inch pieces
1/2 teaspoon Chinese rice wine
1/2 teaspoon cornstarch
1 teaspoon vegetable oil
1/2 teaspoon sesame oil
1/2 teaspoon minced garlic
1 Tablespoon diced red pepper
3 black mushrooms, soaked, stems removed, and diced
2 ounces abalone or oyster sauce
3 Tablespoons toasted pine nuts
1. Bring small pot of water to the boil, add salt and the soy beans and simmer for twenty minutes. Then drain and set aside.
2. Mix cod with wine and cornstarch.
3. Heat a wok or fry pan then add vegetable and sesame oils, and then add the garlic and the cod. Stir fry for just half a minute before adding red pepper and mushroom pieces. Stir-fry these together for another half minute, then stir in the abalone or oyster sauce. Toss well, put into a pre-heated platter or bowl and top with pine nuts. Serve.
